Strain the juice of the fairy grass into a measuring cup, and you will get about 750ml of concentrated liquid. 3. Pour half of the reserved water (350ml) into the residue of the jelly grass in the pot and scrub it vigorously. You will feel the slippery gelatin released by the jelly grass leaves on your fingertips. After scrubbing, filter the juice into a measuring cup. Repeat the process of pouring in the last half of the reserved water (350ml) and rubbing again. Pour the juice into the measuring cup. Finally, you need to collect about 1450ml/cc (6 cups x 235ml) of grass jelly liquid. If the amount is not enough, repeat the scrubbing action with a little clean water to collect enough grass jelly liquid. 4. Next, use a cloth bag to filter the grass jelly liquid for the final time. This step is to ensure that the finished product is smooth and free of residue or fine sand. Sand and dust in the grass jelly will definitely affect the taste, which will be very disappointing. 5. Put 1100ml of the filtered grass jelly liquid into the pot and boil it. At the same time, use the remaining 350ml of grass jelly liquid to dissolve 75g of cassava starch. After stirring evenly, it is best to filter it again. Carefully stir the starch granules in the filter and blend them into the grass jelly liquid. Do not discard the starch granules, otherwise the amount of starch will not be enough. 6. When the grass jelly liquid in the pot boils, slowly add in the tapioca starch mixture while stirring quickly and continuously to prevent the grass jelly paste from clumping. When large bubbles appear in the pot, turn down the heat slightly, stir constantly, and continue cooking for 6 minutes. The longer the time, the better. It must be cooked until it becomes very viscous. If you make a large amount of grass jelly, you have to cook it for a longer time, otherwise the grass jelly will not be chewy. 7. Pour the grass jelly paste into a container and let it cool and solidify.
