Recipe: 100 catties of flour, add 30-35 catties of water, 40 grams of alkali, 80 grams of salt, and some eggs. Note that the alkali must be dissolved in hot water before use, and cold water cannot be used, because cold water can easily cause the alkali to clump together. At the same time, do not add too much alkali, otherwise the noodles will be bitter and too yellow in color. The general ratio of noodle ingredients is 30% to 35% water, 1-3% salt, and 0.5-1% alkali relative to the weight of dry flour. But if you want to make egg noodles, reduce the amount of salt and alkali appropriately. Therefore, for 100 kilograms of flour, only 40g of alkali and 80g of salt are needed.
