Ingredients: 2500 grams of millet flour, 250 grams of soybean flour, 50 grams of salt, 5 grams of alkali, appropriate amounts of fermented tofu stew, chili paste, sweet noodle sauce, a little chopped green onion and vegetable oil. Preparation method: (1) Mix millet flour, soybean flour, alkali and salt together, then add 3000g of water to make a paste. (2) Heat a pancake pan, grease it with a little oil, and place a spoonful of batter in the center of the pan. Use a T-shaped bamboo basket to roll the batter in a circle to form a thin round pancake. When cooked, use a spatula to scoop the pancake out of the pan along the edge, spread with bean curd sauce, chili paste, sprinkle with chopped green onion, put on thinly sliced ​​​​porridge, and roll up.

Method B:

Knead the dough into a batter. Add some salt, five-spice powder and chicken essence. A frying pan is best. When the pan is hot, pour a spoonful of batter into it. Lift the pan and spread the batter evenly on the bottom of the pan (to form a round, thin pancake). If you want to add eggs, spread an egg on the pancake. After frying for a while, add a few drops of oil on it and turn it over and fry it again.

C method:

To put it simply, buy a bag of flour, add water and knead the dough, a bit like making glutinous rice balls, knead it until it is neither sticky nor wet, then you can knead the seasoning into the dough, or press it on the surface of the pancake, just like you would spread the sauce on the surface of pizza and then fry it. Don't put too much oil in the frying pan, otherwise it will be a fried pancake.

Just make sure that the bottom of the pan is evenly covered with oil, then you can start frying the pancakes. You can also use a microwave, but I don’t know how effective it is. I haven’t tried it. This is the simplest method. You can try it.
