1. There is no need to wash the raspberries. Put 1 kg of raspberries directly into the container, pour in 500 g of sweetener and 1.8 L of 35% alcohol concentration of shochu, seal the container, and store it in a dark and cool place to enter the leaching and maturation stage.

2. After soaking for about two months, filter the material with a filter. Do not throw away the filtered material. You can pour about 0.5L of shochu into the material. Soaking raspberries in liquor twice can fully bring out their flavor and aroma.

3. After soaking for about a month, put the raspberries that have been soaked twice into a filter and filter.

4. Mix the raspberry wine obtained from the first soaking with the raspberry wine obtained from the second soaking, and place it in the refrigerator for 1-2 days. After the residue has settled, pour the clarified wine into other wine bottles and seal them for storage.

1. The containers used in the brewing process can be ceramic jars or glass bottles, but it is recommended not to use containers made of plastic because plastic may react chemically with alcohol and produce toxic substances. In addition, tools and containers made of iron or aluminum cannot be used.

2. The tools and containers used in the brewing process must be sterilized and must be free of grease and water.

3. Use 2 kilograms of white sugar for every 10 kilograms of fresh raspberry fruit. It is recommended not to add too much sugar, as too much sugar will affect normal fermentation and may produce ingredients that we don’t want.

4. You can add sugar to the brewed raspberry wine to adjust the sweetness before drinking it, but you don’t have to add sugar if you don’t like sweet wine.

5. After the raspberries are crushed, you can also add an appropriate amount of koji, such as Angel sweet koji for making rice wine, which can increase the insurance factor of successful fermentation.
