Sichuan pepper (scientific name: Zanthoxylum bungeanum Maxim.), also known as: Sichuan pepper, big pepper, Qin pepper, Shu pepper, Sichuan pepper or mountain pepper. It is a deciduous shrub or small tree of the Rutaceae family and the Zanthoxylum genus. It can be planted alone or used as a protective thorn hedge. The peel can be used as a seasoning, and aromatic oil can be extracted and used as medicine. The seeds are edible and can also be processed to make soap.

Sichuan pepper can remove the fishy smell of various meats; promote saliva secretion and increase appetite; and dilate blood vessels, thereby lowering blood pressure. It can be eaten by the general population, but pregnant women and those with yin deficiency and excess fire should avoid eating it. The fruit is round and the size of a mung bean, and its rind is a commonly used spice. When the fruit is ripe, the red or purple-red peel is called Jiaohong, and the seeds are called Jiaomu. Both are Chinese medicinal materials and common household condiments. They are mostly found on slopes at an altitude of 2,500 meters, and are also planted. It is drought-resistant, likes sunlight, and is planted in many places.

Traditional Chinese medicine believes that Zanthoxylum bungeanum is warm in nature and spicy in taste.
