How to store ginger

In real life, many people like to eat ginger. Do we know how to store ginger? I think we don’t know. Most of us know that we can just put it in the refrigerator. Not everything can be stored in the refrigerator. Of course, they can make them look fresh on the surface, but we don’t really know that they are actually different. So we can’t trust the refrigerator. If we want to eat more delicious ginger, we must pay attention to the way of storing ginger, pay attention to the temperature, method, location, and humidity of ginger. These are all things we need to pay attention to, so we also need to look at their condition. If there are any changes, we also want them to live in a better environment.

Ginger is a common kitchen condiment in our daily life. In addition to being used as a condiment, ginger can also be used as medicine. Its unique "gingerol" can stimulate the gastrointestinal mucosa, cause gastrointestinal congestion, and enhance digestion ability. It can effectively treat abdominal distension, abdominal pain, diarrhea, vomiting, etc. caused by eating too much cold food. After eating ginger, people will feel hot. This is because it can dilate blood vessels, speed up blood circulation, and cause the pores on the body to open. This not only takes away excess heat, but also takes away germs and cold air in the body. When the body has eaten cold food, been caught in the rain or stayed in an air-conditioned room for a long time, eating ginger can promptly eliminate various discomforts caused by the cold body.

But often the ginger bought at home is either dried up or rotten after being stored for a long time. So, is there a better way to store it?

Four simple methods for storing ginger:

1. Pit storage: In areas with high groundwater levels, pit storage is often used to store ginger. The depth of the pit should be such that no water leaks out. The pit is usually 1 meter deep and about 2 meters in diameter. It should be wide at the top and narrow at the bottom, and can be round or square. One pit can store about 2,500 kilograms. The total thickness of the covering soil is 60 cm to 65 cm, with the principle of maintaining a suitable storage temperature in the pile. The top of the pit is made into a round pointed top with straw to prevent rain, and drainage ditches are set up around it. A wind barrier is set up on the north side to protect against the cold.

During storage, it is necessary to prevent both heat and cold. The temperature is easy to rise in the early stage of entering the pit, and the pit mouth cannot be completely closed. In the first one month, a relatively high pit temperature is required, which needs to be above 20 degrees, and then it can be kept at around 15 degrees. The pit mouth must be sealed tightly in winter to prevent the pit temperature from being too low. During storage, check the ginger pieces frequently to see if there are any changes, and there should be no water accumulation at the bottom of the pit.

2. Burial with mud and sand: The burial pit is made of bricks and stones in a warehouse or basement, with a height of about 0.8 meters, a width of about 1 meter, and an unlimited length. When storing, first spread a layer of mud and sand about 5 cm thick and with a water content of about 10% on the bottom of the pit, and finally cover it with mud and sand to prevent the ginger from being exposed to the air.

3. Storage in air-raid shelters: a layer of sand and one or two layers of ginger are stacked into a rectangular pile 1 meter high and 1 meter wide. Each pile weighs 1250-2500 kg. In the middle of the pile, stand a ventilation bundle with a diameter of about 10 cm made of thin bamboo poles, and put a thermometer in it to measure the temperature of the pile. The four sides of the stack are sealed with wet sand. After sealing the stack, cover the cave door and leave air holes on the cave to prevent cold wind from blowing in.
