What are the ways to cook Hericium erinaceus?

Foods made with Hericium erinaceus taste quite delicious and can be paired with many ingredients, such as fried Hericium erinaceus with pork belly slices, or fried Hericium erinaceus with Chinese cabbage. These are both homely and convenient preparation methods that everyone can do.

1. Stir-fried Hericium erinaceus with tripe slices

[Ingredients] 30 grams of dried Hericium erinaceus, 260 grams of cooked pork tripe, 80 grams of leeks, and appropriate amounts of vegetable oil, sesame oil, refined salt, MSG, sugar, pepper powder, and cooking wine.

(Preparation method) Soak the dried Hericium erinaceus in warm water, wash, slice along the spines, blanch in boiling water to remove the bitterness, remove and drain; cut the cooked pork tripe into slices. Heat vegetable oil in a wok over high heat, add cooked pork belly slices and Hericium erinaceus slices and stir-fry, add cooking wine, salt, sugar, MSG, and chives, drizzle with sesame oil, stir well, serve on a plate, and sprinkle with pepper.

2. Stir-fried Chinese Cabbage with Hericium erinaceus

(Ingredients) 800 grams of soaked Hericium erinaceus, 20 grams of ham slices, 120 grams of green vegetable hearts, 2 eggs, and appropriate amounts of scallion segments, ginger slices, refined salt, wet starch, chicken broth, and cooked lard.

(Preparation method) Slice the soaked Hericium erinaceus along the spines, blanch in boiling water for 10 minutes, remove, drain, put in a bowl, add scallion, ginger, salt, chicken broth, steam in a steamer for 35 minutes, remove, drain the broth, and remove the scallion and ginger. Add starch and chicken soup to the egg white bowl to make a paste, apply it on the Hericium erinaceus slices, and fry them in the hot lard pan until they turn yellow.

Remove from the pan. Leave some oil in the pan, heat it up, add the ham slices and green cabbage, stir-fry, and add the Hericium erinaceus

Bring the slices and chicken broth to a boil, then thicken with wet starch.

3. Braised pork ribs with Hericium erinaceus

(Ingredients) 250 grams of soaked Hericium erinaceus, 150 grams of pork ribs, 50 grams each of soaked black fungus, soaked magnolia slices, and rapeseed heart, and appropriate amounts of dried shrimp, refined salt, MSG, eggs, vinegar, onions, ginger, dry starch, clear soup, sesame oil, and cooked lard.

(Preparation method) Remove the roots and stems of the soaked Hericium erinaceus, cut into slices, blanch briefly in boiling water, remove and squeeze out the water; peel the pork ribs, wash, chop into minced meat, put into a bowl, add egg white, water and fine salt, mix well, squeeze into balls, put into boiling water and blanch until cooked, remove; wash the soaked magnolia slices and rapeseed heart, cut into slices; wash the green onion and ginger, and cut into thin strips respectively. Put the rapeseed hearts into a pot of boiling water and blanch them until cooked, then take them out. Put the wok on low heat, add the cooked lard and egg yolk liquid made with dry starch, spread it into egg skin, take it out and cut it into slices. Add clear soup, magnolia slices, dried shrimps, black fungus, rapeseed hearts, scallion shreds, ginger shreds, egg skins, pork dumplings, and hericium erinaceus slices into a wok and bring to a boil. Add salt, MSG, and vinegar, skim off the foam, and drizzle with sesame oil before serving.

4. Hericium erinaceus stewed pork ribs

[Ingredients] 250 grams of fresh Hericium erinaceus, 200 grams of pork ribs. 3 shiitake mushrooms, appropriate amounts of salt and soy sauce.

(Preparation method) Soak fresh Hericium erinaceus to remove the bitterness; soak shiitake mushrooms and then slice them; wash pork ribs and cut into small pieces. Put Hericium erinaceus, shiitake mushroom slices and pork ribs into the pot, add appropriate amount of water, cook over high heat for half an hour, and add salt and soy sauce.
