Main ingredients: 1 white fish, 20g wild rice stem, 30g pickled vegetables. Accessories: 20ml lard, a little scallion, a little chopped green onion, a little dried chili shreds, 15ml steamed fish soy sauce, a little shredded ginger, 3 teaspoons cooking wine.

1. Remove the scales from the white fish and clean the internal organs.

2. Use a knife to cut 2 slices of fish meat along the main bone.

3. Cut the fish fillet in two-thirds of its back without cutting it through, cut off the head and tail, cut the fish bones into sections, and place them on a plate. Sprinkle with cooking wine and marinate for 10 minutes.

4. Wash the pickles and cut into 6 cm long pieces.

5. Wash and cut wild rice stems into 6 cm long strips.

6. Place the pickled vegetable segments and wild rice stem shreds in the middle of the fish, and then add the scallion segments, ginger shreds and chili shreds.

7. Pour water into the steamer and boil it, then put the large fish in and steam for 8 minutes, then turn off the heat and take out. Remove the shredded ginger and green onion segments, sprinkle the chopped green onion on the fish, and pour steamed fish soy sauce on it.

8. Heat lard and olive oil in a pan and pour over the fish.
