How to make red chili oil fragrant

Red pepper oil is a red oil that is a bit spicier. This oil tastes greasy. Some people also like to add some sesame seeds. This red pepper oil is generally used as a condiment. We can add a little bit of this red pepper oil when cooking, and we can also use it as a sauce when eating other things. However, many people don’t know how to make it. So how to make red pepper oil fragrant?

Red chili oil is one of Shaanxi's famous specialties, also known as oil chili. It is made by mixing chili powder made from Qin pepper with fragrant seasonings such as peanuts and sesame seeds, then pouring cooked oil in, and then adding a splash of farm vinegar. The aroma is fragrant, and the oil chili is ready!

Step 1 : Mix coarse and fine chili powder, add appropriate amount of salt and MSG, mix well (if you like to add sesame seeds, add them at this step and mix well), then put chopped green onion, garlic and onion on the surface. I personally think that chopped onion and sesame seeds are optional, hehe, because the chili oil is fragrant enough with chopped green onion and garlic, so feel free to add them~

Step 2 : Pour more oil into the pot (at least enough to pour over the chili powder), put in appropriate amounts of peppercorns, bay leaves, cinnamon, and heat the oil over medium heat. When the spices change color and black and the oil heats up to smoking, remove the spices and turn off the heat. Leave it for a few seconds until the oil temperature drops a little, then pour it on the chopped green onion and garlic in portions while using a spoon to stir the chili powder up and down. Sprinkle it thoroughly and mix all the ingredients in the bowl together. Finish!

Tips : 1. The oil temperature is the most important and the most difficult to control for the aroma of chili oil! If the oil temperature is too low, the chili oil will look like a mixed mixture and will not be fragrant. If the oil temperature is too high, the chopped onion, garlic and chili powder will easily be burnt... So try to heat the oil over medium heat and control the appropriate oil temperature before pouring the chili oil. If you still can't get it right, try a few more times. As long as the oil temperature is right, the chili oil you pour out will definitely be fragrant!

2 Generally, when my family makes chili oil, we use a porcelain bowl to put the ingredients. It is best to have a lid so that we can just cover it when it is done. It is very convenient! My sister told me that porcelain bowls are more fragrant than stainless steel bowls.
