Melting point and solubility: The content of crystalline water in pure naringin and its melting point vary depending on the crystallization and drying methods. The naringin molecule obtained by crystallization with water as solvent contains 6 to 8 crystalline waters and has a melting point of 83°C; while the naringin molecule obtained after drying to constant weight at 110°C contains 2 crystalline waters and its melting point rises to 171°C. It is soluble in methanol, ethanol, acetone, acetic acid, dilute alkali solution and hot water. At room temperature, its solubility in water is 0.1%, and it can reach 10% at 75°C. Insoluble in non-polar solvents such as petroleum ether, ether, benzene and chloroform.

Usage

Bitterness agent. The naringin dihydrochalcone obtained by hydrolysis and hydrogenation of this product is a sweetener with a sweetness about 150 times that of sucrose.
