Transglutaminase has many uses in food, mainly including:

Improve food texture. Transglutaminase can catalyze cross-linking reactions between protein molecules and improve many important properties of proteins.

Improve the nutritional value of protein. Glutamine transaminase can covalently cross-link essential amino acids for the human body (such as lysine) to proteins, preventing the destruction of amino acids by the Maillard reaction and improving the nutritional value of proteins.

Causes of elevated glutamate aminotransferase

1. People who drink a lot or for a long time have elevated glutamate transaminase.

2. Viral hepatitis This is the most common disease that causes elevated glutamate transaminase. All types of acute and chronic viral hepatitis can lead to elevated glutamate transaminase. What we want to remind everyone here is that for patients with viral hepatitis, when glutamate aminotransferase rises to twice the normal value, it is the best time to fight the virus.
