How to make Guyuan Ejiao

Food: 250 grams of donkey-hide gelatin cake, 250 grams of rice wine, 250 grams of white sesame seeds, 250 grams of walnut kernels, 130 grams of jujube, 130 grams of old rock sugar, and appropriate amount of wolfberry.

The production process of Guyuan Ejiao:

Use a stone mortar to mortar the donkey-hide gelatin into small pieces and put them into a laminated glass box. Pour in the prepared rice wine and soak it for 2-3 days until the donkey-hide gelatin is dissolved. Fry the white sesame seeds and cook the walnut kernels. Wash and dry the jujube, the drier the better. After roasting, use a kitchen shear to cut a small piece. Pour the old rock sugar into small pieces. Pour the melted donkey-hide gelatin cake and rice wine into a stainless steel steamer or a stone pot (don't use an aluminum pot), add in rock sugar, and simmer over low heat. Use a wooden spatula to stir frequently in a clockwise direction to prevent the food from sticking to the pan. Just wait until the national flag is hung on the donkey-hide gelatin cake. That is, the donkey-hide gelatin cake liquid can be shaped like an inverted triangle on the wooden shovel.

Add the roasted date pieces first. Add wolfberries, then white sesame seeds, and finally walnut kernels. Each time you add something, stir it evenly and thoroughly before adding the next thing. Line a sealed can or thick baking tray with a plastic bag, brush a thin layer of oil on it, pour the donkey-hide gelatin paste into the box while it is still hot, cover it with the plastic bag, flatten it with a rolling pin or the palm of your hand, put it in the refrigerator for an hour, then take out and slice it.

1. Main ingredients

Their main ingredient is all donkey-hide gelatin cake, but there are some differences in their auxiliary ingredients. Among them, donkey-hide gelatin cake, white sesame, old rock sugar, walnut kernels, and rice wine are both present in both, but donkey-hide gelatin cake contains jujube and wolfberry. If donkey-hide gelatin cake is used for cooking, the effect will be relatively better.

2. Different methods

Donkey-hide gelatin is made by boiling in a large pot; Guyuan paste is made by steaming in water.

3. Shelf life

Donkey-hide gelatin is cooked directly in a frying pan, which has less water and a relatively long shelf life. After being packaged in a plastic bag, the shelf life can be from half a year to a year. Guyuan paste is steamed in water, contains more water, and is too soft. Its shelf life is only 1 to 2 weeks, so it needs to be refrigerated.

The taste of donkey-hide gelatin is relatively sweeter and easier to carry. Guyuan paste is more like Chinese medicinal materials and appears to be soft or liquid.
